Creamy Celery and Garlic Soup

2 T butter
2 bunches green onion (both white & green parts) chopped
2 heads garlic, cloves separated and peeled
2 bunches celery, slices, leaves removed
2 lg potatoes, peeled and diced
14 c water
6 vegetable boullion cubes
fresh parsley sprigs
S & P to taste


  1. Heat the butter in large kettle and saute onion until tender (2 mins).
  2. Add the garlic and celery and saute another 2 minutes.
  3. Add potato, water, boullion cubes and parsley and bring to simmer.
  4. Cover and simmer 30 minutes.
  5. Remove parsley and discard.
  6. Remove from heat and puree in batches.
  7. Return to pot and heat through.
  8. Add s & p to taste.
