2 bunches green onion (both white & green parts) chopped
2 heads garlic, cloves separated and peeled
2 bunches celery, slices, leaves removed
2 lg potatoes, peeled and diced
14 c water
6 vegetable boullion cubes
fresh parsley sprigs
S & P to taste
- Heat the butter in large kettle and saute onion until tender (2 mins).
- Add the garlic and celery and saute another 2 minutes.
- Add potato, water, boullion cubes and parsley and bring to simmer.
- Cover and simmer 30 minutes.
- Remove parsley and discard.
- Remove from heat and puree in batches.
- Return to pot and heat through.
- Add s & p to taste.
